Recipe (4 pax)

Ingredients:

  • 4kg meat
  • 2 tbsp Baba’s curry spice
  • Water
  • Brown sugar
  • 500ml M&S Coconut Cream
  • 500g kerisik
  • Salt
  • Turmeric leaves / kaffir lime leaves

Ground Ingredients:

  • 20 shallots
  • 1 clove garlic
  • 4 inches ginger
  • 3 inches galangal
  • 3 inches fresh turmeric / tablespoons turmeric powder
  • 20 lemongrass stalks
  • 30 dried chilies

Instructions:

  1. Blended ground ingredients until the oil separates.
  2. Add Baba’s curry spice mixed with water. Stir-fry until the oil separates.
  3. Then, add the meat and water. Cook until the meat is tender and the water is dry.
  4. After that, add half brown sugar.
  5. Add M&S Coconut Cream and water.
  6. Add kerisik. Season with salt. Simmer until dry.
  7. Finally, sprinkle with turmeric leaves or kaffir lime leaves. Ready to serve.
