Recipe (4 pax)
Ingredients:
- 4kg meat
- 2 tbsp Baba’s curry spice
- Water
- Brown sugar
- 500ml M&S Coconut Cream
- 500g kerisik
- Salt
- Turmeric leaves / kaffir lime leaves
Ground Ingredients:
- 20 shallots
- 1 clove garlic
- 4 inches ginger
- 3 inches galangal
- 3 inches fresh turmeric / tablespoons turmeric powder
- 20 lemongrass stalks
- 30 dried chilies
Instructions:
- Blended ground ingredients until the oil separates.
- Add Baba’s curry spice mixed with water. Stir-fry until the oil separates.
- Then, add the meat and water. Cook until the meat is tender and the water is dry.
- After that, add half brown sugar.
- Add M&S Coconut Cream and water.
- Add kerisik. Season with salt. Simmer until dry.
- Finally, sprinkle with turmeric leaves or kaffir lime leaves. Ready to serve.
