Spicy Cockles & Chives In Coconut Milk

  • 300g cockles, washed
  • 200g chives, cut into 2cm length
  • ½ cup M&S Coconut Milk
  • ¼ cup water
  • 1 tsp sugar
  • Limes to serve with,sliced
  • 2 tbsp cooking oil
  • 6 shallots
  • 1 tbsp dried chili paste
  • 1 tsp shrimp paste

  • Put cockles in a pot of boiling water. Turn off fire and leave for 2 minutes. Drain dry and remove cockles from the shells. Leave aside.
  • Heat cooking oil and saute grinded ingredients until fragrant. Add in M&S Coconut Milk, water and sugar. When it starts to heat through, add in cockles and chives.
  • Cook for ½ minute or when it starts to boil, turn off fire.
  • Serve dish with limes.
