White Otak Otak



  • 300g fish paste
  • 150ml M&S Coconut Milk
  • 2/3 tbsp salt
  • 1 tsp monosodium glutamate (optional)
  • 1 tsp white pepper
  • 1 tbsp coriander powder
  • ½ tbsp fennel powder
  • 3 egg whites
  • 10 shallots
  • 4 cloves garlic
  • 10 pieces of banana leaves (10cm x 10cm)

  • Place the fish paste, egg whites, coriander powder and fennel powder in a food processor and process until mixture is well mixed. Add in M&S Coconut Milk, salt and pepper. Continueto process mixture for 30 seconds. Add in grinded ingredients and mix well.
  • Remove and divide mixture into 10 portions. Put one portion onto a lightly greased banana leaf. Roll banana leaf to flatten fish paste mixture and secure both ends with toothpick.
  • Grill for 5 minutes on both sides. If using a pan, lightly grease pan with cooking oil and pan fry for 5 minutes on both sides.
