  • 2 coconut, grated (white only)
  • 1½ cups granulated sugar
  • 1 cup M&S Coconut Milk
  • ½ cup evaporated milk
  • 30g butter
  • ½ tsp salt
  • 2 tsp vanilla essence
  • A few drops cochineal

  • Combine the ingredients in a large saucepan and cook over high heat for the first 10 minutes, stirring constantly.
  • Reduce fire when mixture begins to thicken and continue to cook over low fire for another ½ hour or until mixture starts to leave sides of pan.
  • Lightly grease a shallow tray and spread mixture over it. Lightly press down on mixture. Leave to cool completely before cutting.
