Caribbean Fruit Salad



  • 3 bananas, sliced
  • 2pcs watermelon, diced
  • 2pcs pineapple, sliced
  • 2pcs rock melon, sliced
  • 1 tbsp crystallised ginger, finely chopped
  • ¼ cup shredded coconut, toasted
  • 125ml M&S Coconut Milk
  • 2 tbsp lime juice
  • 1 tbsp orange rind
  • 2 tbsp fine brown sugar

  • Squeeze some lime juice over bananas to prevent it from turning brown. Put fruits to chill in the refrigerator.
  • Combine M&S Coconut Milk, lime juice, orange rind, brown sugar and crystallised ginger.
  • Just before serving, stir coconut milk mixture into the mixed fruits and sprinkle shredded coconut over it. Serve immediately.
