Seafood Boat



  • 1 pineapple
  • 180g prawns, shelled
  • 200g squid, cut
  • 3 tbsp cooking oil
  • 100g Bombay onion, wedges
  • 5 cloves garlic, sliced
  • 150ml M&S Reduced Fat Coconut Milk
  • 1 chili, sliced
  • 1 sprig spring onion
  • ½ tsp salt
  • ½ tbsp sugar
  • ½ tsp pepper
  • Cut pineapple into half, scoop up flesh (creating a “boat”). Dice flesh and leave aside.
  • Heat cooking oil in a wok and add in ingredients A. Stir till fragrant, then add in ingredients B and mix well. Add in pineapple, prawns and squid. Simmer till gravy thickens.
  • Scoop into pineapple boat.
