Rice Benkar

  • 700ml M&S Coconut Milk
  • 300g sugar
  • 1 tsp salt
  • Banana leaves to line tray, lightly greased
  • 180g rice flour
  • 50g green pea flour
  • 10g sago flour
  • 600ml water (soaked together for 3 hours)

  • Scald banana leaf with hot boiling water and line a square tray (20cm x 20cm). Lightly grease banana leaf. Preheat oven to 200°C.
  • Sieve the soaked flour mixture into a saucepan. Add in M&S Coconut Milk, salt and sugar. Stir till well mixed and cook over medium fire, stirring all the time until it thickens.
  • Then ladle mixture into the prepared tray. Bake for ½ hour and then grill in oven for another 20 minutes or until the top is brown.
